The ultimate balanced dinner for you and your family that takes 15 minutes to prepare. This is all about throwing a protein and a whole lot of veggies onto a baking dish and popping it into the oven. Full of healthy fats, nutrients from the greens and low-GI sweet potato – it’s the most complete nutritional – and tasty meal – you’ll make all week!
Serves: 4
Ingredients:
2 heads broccoli, cut into florets
1 head cauliflower, cut into florets
2 sweet potatoes, sliced into wedges
4 sustainably-sourced salmon fillets
Marinade:
2 tbsp honey
2 tbsp wholegrain mustard
2 tbsp sesame seeds
2 tbsp tamari
Method:
1 Preheat oven to 180°C.
2 Add cauliflower and sweet potato to baking tray and drizzle with 2 tbsp olive oil. Season with 2 tsp sea salt. Bake for 20-25 mins
3 To make marinade, combine all marinade ingredients and stir to combine
4 Remove pan from oven and add salmon and broccoli. Drizzle with 2 tbsp olive oil and pour marinade over salmon. Return to oven and bake for 15 mins, or until salmon is cooked through
