Choc-coffee energy bites

Our choc-coffee bites are the perfect quick energy hit.

To celebrate International Coffee Day on October 1st wherever you may be, make these bite-size balls of energy for a portable morning tea snack. They're decadent little morsels so you'll only need one or two to hit the spot.

You can make the coffee flavour of this recipe as strong as you prefer. Start with a 1/4 cup of hot water and add as much or as little coffee as you like to get the right brew for you.

Choc-coffee energy bites

Makes around 12 balls

  • 1 cup of walnuts

  • 1/2 cup pitted dates

  • 1/4 cup strong black coffee

  • 2 tablespoons cacao or cocoa

  • 1 tablespoon chia seeds

  • Pinch of salt

  • 1 tsp vanilla

  • 1/2 cup of desiccated coconut (for rolling)

  • Blitz a cup of walnuts in a food processor or blender until they resemble rough breadcrumbs. Tip the ground walnuts into a bowl.

Next, mix the dates and coffee in the food processor until they form a paste. Add the ground walnuts back into the food processor, along with the cacao, chia seeds, salt and vanilla, and blend until combined.

Sprinkle coconut onto a plate. Using a teaspoon, take scoops of the mixture and roll between your palms to make bite-sized balls. Toss lightly in the coconut and set aside.

Store in the refrigerator.
